Smoking Woods
What wood you use for your smoking matters…there’s some great woods out there, if you’re planning on smoking for a while for a cut like brisket or pork shoulder, you want a steady trickle of smoke from a wood chunk, too much smoke overpowers the food, the ideal size for BBQing in my opinion is a large chunk of wood, I was really impressed with these large blocks from HotSmoked I got to try the cherry and hickory, 1kg boxes which contained 8 blocks for £12.50 the quality of the wood was excellent, and you only need put on one block per cooking session.
it’s a really nice way to gauge how much smoke to give your food, as it is so easy to go overboard, especially with smaller chips.
